DESCRIPTION:“Give Beans A Chance” is the motto of Elisabeth Berlinghof and we are very thrilled to speak with her again as part of our Symposium to celebrate the power of pulses! Every farmer knows it: Legumes can form a symbiosis with bacteria to make nitrogen from the air available for plants. And in such a way that the healthy limits of nutrient supply are not exceeded\, as is often the case in over-fertilized German soils. Because of its versatility\, this plant family is also extremely valuable in the kitchen and for our health\, as we explored in depth in our very first Warenrunde in August together with Berlin cooks and food artisans. ⠀\n⠀\nElisabeth Berlinghof\, Food Kompanion and activist Slow Food Youth Berlin \, together with Ulrich Quendt of the Demonetzwerk Erbse Bohne\, will give us insights into why pulses are so important for health\, biodiversity\, ecological and food systems in so many different ways. And because we are also strong advocates for more pulses in our food culture\, we will ask ourselves: Why are there so few local beans\, lentils\, etc. on our plates? Where are the gaps in local value chain? Does this plant family need an image change from “food for the poor” to “local superfood”?⠀ \n  \nSPEAKERS\n \n  \nElisabeth has developed her interdisciplinary view in her work at Food Kompanions\, in various practical experiences along the value chain\, through her background in gastronomic sciences\, and by immersing herself in different (food) cultural contexts. She researched in Italy the variety of legumes\, as the core of a sustainable diet\, in sensory and agro-ecological experiments.
