Cultural and culinary regions, with Dominik Flammer [DE]

Dominik Flammer is a food researcher and book author and has been studying the history of nutrition for thirty years. His books and films have won countless international awards. His work focuses on the culinary heritage of the Alpine region and in particular on closer cooperation between agriculture and gastronomy. Flammer is the owner of the Zurich agency Public History Food. He is currently heading the development of the “Culinarium Alpinum“. This international competence centre for alpine culinary arts is to open its doors in autumn 2020 in collaboration with numerous renowned organisations from the agricultural, gastronomy and food production sectors in the former Capuchin monastery in Stans in the Swiss canton of Nidwalden.
