Comfort Food #7: Bruno Verjus – Inspiring other people to cook

Bruno Verjus is the owner and head chef of the Parisian restaurant Table (1* Michelin). Since 2013, he has been standing at the stove of his self-designed restaurant with an open kitchen, cooking simple à la minute-dishes from the most wonderful products, which tell stories of quality, craftsmanship and origins. His mission is to inspire people with food, all the while sharing food for thought. Every day since the beginning of the lockdown in Paris, he has been speaking to us on his Instagram account about one ingredient, one element that gives him ideas for new dishes – without turning it into a live cooking show.
Bruno believes that the Corona crisis offers many opportunities, for example, for improving our access to food: “We can recreate a new world, with more sharing, more love and higher quality of produce”, he says. “And I think we as restaurateurs can contribute to that. We know about standards of safety and hygiene, and we have the connections to high quality produce.” In the end, however, consumers carry a lot of responsibility: Anyone who now makes the conscious decision not to shop exclusively at the supermarket, but also at the farmers market or neighborhood shop, will cause the food industry to rethink.
