Kantine Zukunft – Potentials of public kitchens, with Speiseräume F+B [DE]

Speiseräume F+B is a young research and consulting company from Berlin that operates at the interface of city, country and kitchen. Speiseräume is responsible for implementing the project Kantine Zukunft Berlin. From the team of eight, Philipp Stierand, Patrick Wodni and Dinah Hoffmann will present their work.
Philipp Stierand, who holds a doctorate in spatial planning, has played a major role in shaping the discourse and development of a municipal food policy in Germany in recent years, not least with his book on the link between the city and nutrition. Since 2019 he is the managing director of Speiseräume und Kantine Zukunft project manager.
Patrick Wodni is a trained cook, known for his agriculturally oriented work in community catering and head of the Kantine Zukunft trainer team. Here he can contribute his varied experience and fulfil his desire to do good for many.
Dinah Hoffmann has a background in gastronomic sciences and communication in the fields of health and society. With her knowledge she is committed to a positive social change by improving the urban food system.
Together they are helping Berlin canteens to improve the quality of communal catering while keeping costs low, thereby also influencing agricultural practices and increasing the demand for products from regional, organic farming.
